A STANDOUT in both appearance and taste, this looks superb in the garden as well as adding an appetising depth of flavour to fish dishes and salads.

An attractive perennial herb (not to be confused with Florence fennel, an annual vegetable grown for its bulbs) producing aromatic bronzed fern-like foliage and flat topped yellow flowerheads in mid to late summer. With its aniseed flavour its traditionally used with fish, but can also be chopped into salads and added to soups. Dry the seeds and use them in Middle Eastern, and Indian recipes or use to flavour pickles or bread and cakes.

Planting 
Plant in in well-drained soil, in bright, sunny position. May also be grown in a large container.

Care
Keep well watered until established, and in dry weather. Self-seeds easily, will die back over winter and regrow in spring.

Height & Spread:
90 – 150cm × 45 – 60cm.

Harvesting
Snip leaves and stems as needed. Harvest seed head in late summer when they turn green/brown.
